I agree with Faboamanto, a unicorn would be nice, with or without all its medieval interpretations.
But also a little nice dragon might do nicely for a fierce Guy of Gisborne ;o)
A phoenix, though quite a bit like Guy’s own story, might be a bit hard to hold on to.
Perhaps a Venetian winged lion or Guy in a position of the other saint of Venice, the dragon slinger?
